Cafes work in Bellevue
Bellevue is a city of office towers, apartment blocks and walkable retail streets, and coffee demand follows all three. The downtown core around Bellevue Square and the Spring District draws weekday commuters and office workers, while the residential neighbourhoods to the east and south carry the weekend and school run trade. Chains hold a lot of the visible corners, and independent owner operators hold the loyalty. Search demand splits the same way: people look for a cafe near a specific building, a specific park or a specific school, and they look for open hours and seating before they leave the house. That is the demand available in Bellevue, and it is spread across many small searches rather than one big one.
